BORN AND RAISED in France,
JACQUES TORRES won the prestigious
Meilleur Ouvrir de France in 1986, before moving across the Atlantic to work as pastry chef at the famous
Le Cirque restaurant in New York. In 2000 he set up a chocolate factory and a store in Brooklyn, New York and in 2004 a further factory followed in Manhattan -- this time with glass walls, to enable visitors to watch the chocolate being made. DOMINICAN REP. 77.5% Dominican Republic, Carribean
In our opinion definitely the best of the three single-origin bars by JACQUES TORRES. We tasted strong flavours of tobacco and wood, as well as spice, and were pleased by an excellent, dry aftertaste.
PERU 64% Peru, South America
This bar is rather sweet, even for a 64%, which may be the reason why its more subtle flavours remain shrouded. The lack of complexity made this bar slightly disappointing, on the single-origin scale.
